Grafham Water Centre is offering a range of Outdoor Curriculum courses ranging from Forest School Leader to First Aid, to Outdoor Cooking.

ITC Level 2 Award in Food Hygiene in the Outdoors (RFQ)

This qualification in intended to provide the learner with an understanding of the benefits of Outdoor Food Hygiene.

Specifically, roles and responsibilities, how to prepare, cook and manage others preparing and cooking food within the outdoor environment using approved principles and practices.  It is suitable for all who wish to become competent, need permissions or have an interest in teaching, and facilitating food preparation and cooking within the outdoor environment.

Topics include:

  • The principles of food safety and of food hygiene
  • How individuals can take responsibility for food safety and the requirement to take and record food temperatures
  • Understand food contamination and controls in the outdoors
  • Know how to store ingredients and cook food safety outdoors
  • Special diets, dietary allergies, considerations when preparing and cooking food

Applicable to a wide range of outdoor cooking environments from camp kitchens to individual and group expeditions.

ITC Level 3 Award in forest school and paediatric first aid (RQF)

This is a full 2 day course and you need to make sure you attend all of it to complete the ITC 16hr Forest School First Aid Training.

The course does have an element of assessment.  In order to pass the course attendees are required to take a full and active part in practising all of the procedures and protocols taught to provide for the necessary continual assessment opportunities.

This is an active course, there is a lot of rolling around practising first aid techniques.  Please wear suitable clothing that you do not mind lying down on the floor in.

Much of this course will take place outdoors, please bring a waterproof jacket, waterproof trousers and outdoor boots/shoes.  If the weather is cold we also recommend hat and gloves.

Level 3 qualifies you to run Forest School in your setting as a Forest School Leader.

Training is  a mix of practical, theory and experimental activities all delivered outside over 12 days.

There are five units- all taught with a strong emphasis on principles and practice. Assessment work is submitted in a mixed format- videos, photographs, and spoken word. There are NO written essays, and every unit has a clear and scaffolded template.

Once you have signed up for the course, you must complete the additional application form (attached to your confirmation email) and return it to carol@underthehazels.org.
